Ingredients
Boneless, skinless chicken breasts (2 pounds)
2 large lemons (juice only, ~1/2 cup)
1 tablespoon ground black pepper
3 tablespoons olive oil (extra virgin preferred)
Instructions
Juice lemons completely, reserving ~1/2 cup.
Whisk lemon juice, pepper, and olive oil in a bowl.
Add chicken breasts, coat fully, and marinate 30+ minutes.
Preheat grill to 375°F (190°C), oil grates.
Remove chicken from marinade, shake off excess, and grill 5–7 minutes per side.
Transfer to a plate, let rest 5 minutes before serving.
