Description

A Mediterranean-inspired zesty grilled chicken dish with lemon juice and cracked black pepper. Tender boneless breasts get a juicy crust thanks to olive oil and citrus marinade, ideal for summer or quick meals.


Ingredients

Boneless, skinless chicken breasts (2 pounds)
2 large lemons (juice only, ~1/2 cup)
1 tablespoon ground black pepper
3 tablespoons olive oil (extra virgin preferred)


Instructions

Juice lemons completely, reserving ~1/2 cup.
Whisk lemon juice, pepper, and olive oil in a bowl.
Add chicken breasts, coat fully, and marinate 30+ minutes.
Preheat grill to 375°F (190°C), oil grates.
Remove chicken from marinade, shake off excess, and grill 5–7 minutes per side.
Transfer to a plate, let rest 5 minutes before serving.


Notes

Use thighs for richer flavor if needed
Bottle lemon juice if fresh unavailable
Crack fresh pepper directly on meat (optional)
Use avocado oil if olive oil unavailable
