Ingredients
2 skinless chicken breasts (6 ounces each)
1/2 cup non-alcoholic barbecue sauce
4 cups shredded lettuce (or romaine)
1 ear corn, husked
1 tbsp honey
1 tbsp apple cider vinegar
1 avocado, diced
Instructions
Season chicken with paprika, garlic powder, and black pepper
Grill chicken over medium heat 6-7 minutes per side; brush with 2 tbsp barbecue sauce during final 2 minutes
In a pan, mix remaining BBQ sauce with honey and 1 tbsp apple cider vinegar; simmer 5 minutes to thicken
Brush corn with oil and grill 8-10 minutes, rotating until charred; slice kernels from cob
Toss lettuce with cooled chicken, corn, and 1/2 cup enhanced sauce. Add avocado just before serving
