Description

Juicy stuffed chicken breast filled with spinach, garlic, and mozzarella an easy, comforting dinner that feels gourmet without the fuss.


Ingredients

4 chicken breasts (boneless, skinless)

1 cup fresh spinach (chopped)

1 cup mozzarella cheese (shredded)

2 cloves garlic (minced)

2 tablespoons olive oil

1 teaspoon paprika

Salt and pepper to taste


Instructions

1. Preheat oven to 375°F (190°C).

2. Slice each chicken breast horizontally to form a pocket, being careful not to cut all the way through.

3. Mix spinach, mozzarella, and garlic together in a bowl.

4. Stuff the chicken pockets evenly with the mixture and secure edges with toothpicks.

5. Season each breast with olive oil, paprika, salt, and pepper.

6. Sear the chicken in a hot skillet until golden on both sides.

7. Transfer to a baking dish and bake for 22–25 minutes or until internal temperature reaches 165°F (74°C).

8. Let the chicken rest for 5 minutes before slicing and serving.


Notes

You can swap spinach for kale or sun-dried tomatoes for a Mediterranean twist.

For a creamier version, add ricotta or cream cheese to the filling.

Always let chicken rest before cutting to keep it juicy.
