Description

A summer-ready American recipe that balances bold sweet-and-spicy heat with savory soy sauce. Bone-in, skin-on thighs stay juicy while a honey glaze caramelizes for a sticky finish. Perfect for a showstopping family dinner or gathering.

Ingredients

Scale

4 lb chicken thighs
½ cup honey
⅓ cup light soy sauce
4 cloves garlic, minced
¼ cup brown sugar, packed
1 tsp red pepper flakes
1 tbsp sesame seeds (optional, omit for nut-free)

Instructions

Pat chicken thighs dry and cut into manageable pieces
Whisk together soy sauce, garlic, brown sugar, and red pepper flakes in a bowl
Place chicken in marinade, covering fully. Refrigerate at least 2 hours, up to 4 hours
Simmer honey into remaining marinade over medium heat for 8-10 minutes until thickened
Preheat oven to 400°F. Discard unused marinade. Arrange chicken on a baking sheet
Roast for 30 minutes, basting every 10 minutes with reduced glaze
Broil for 3 minutes to blister the glaze
Let rest 5 minutes before serving

Notes

Marinate chicken at least 4 hours for maximum flavor penetration
Use bone-in thighs to maintain moisture
Monitor oven closely during last 10 minutes to prevent glaze from burning
Sesame seeds can be substituted with sunflower seeds for nut-free option
