Description

A creamy, hearty chicken salad combining shredded chicken, mayo, celery, and seasonings for a quick lunch. Fresh, satisfying, and ready in 15 minutes. Optional pineapple adds a tropical twist.

Ingredients

Scale

2 cups cooked chicken (shredded or diced)
1/2 cup mayonnaise (full-fat)
1 stalk celery (finely chopped, ~2 tablespoons)
1/4 cup grated pineapple (drained, optional)
1 teaspoon seasoning (salt, pepper, garlic powder)

Instructions

Shred cooked chicken using two forks or dice into small cubes
Mince or grate celery into a fine texture
Pour mayonnaise into a mixing bowl and gently stir in chicken
Add celery and pineapple (if using) and fold together
Mix in seasoning until evenly distributed
Transfer to a serving bowl or storage containers

Notes

Use cold chicken and ingredients to prevent separation
Thinly slice celery for balanced texture
For extra creaminess, blend mayo with a splash of milk before mixing
Chill salad for 30 minutes to enhance flavor
If omitting celery, use grated carrots as a substitute but avoid large chunks
