A Mediterranean-inspired one-pan dish featuring flaky baked salmon and caramelized vegetables. Combines rich fish and root veggies with a bright olive oil-lemon-garlic base for a vibrant, healthy, and effortlessly clean-up-friendly meal perfect for weeknight dinners.
Ingredients
1.5 lbs (700g) salmon fillet
3 cups broccoli florets
2 cups carrots, sliced
3 tablespoons olive oil
1 lemon, minced (reserve half for garnish)
3 cloves garlic
1 teaspoon sea salt
1/2 teaspoon black pepper
1/2 teaspoon dried dill or fresh dill
Instructions
Preheat oven to 400°F (200°C)
Line a rimmed baking sheet with parchment paper
In a small bowl, mix sea salt, black pepper, and dill
Pat salmon dry, brush with 2 tbsp olive oil and half the lemon (2 tbsp)
Sprinkle half the seasoning mix on salmon fillet
Toss broccoli and carrots with remaining 1 tbsp olive oil, minced garlic, and leftover seasoning
Place salmon in center of baking sheet, surround with vegetables
Bake 20-25 minutes until salmon reaches 145°F internal temperature
Notes
Use parchment paper for easy cleanup
Substitute broccoli with cauliflower or zucchini
Replace carrots with parsnips or sweet potatoes
Garlic can be raw or roasted depending on preference
