Description

Vibrant layered popsicles made with fresh strawberries, creamy Greek yogurt, and blueberries. No artificial dyes, all-natural colors, and a patriotic twist! Perfect for summer gatherings and refreshing dessert.


Ingredients

Scale

2 cups strawberries, sliced
1 ½ cups Greek yogurt, full-fat
1 ½ cups blueberries, whole
1 tbsp lemon juice
¼ cup granulated sugar
Non-dairy alternative: 1 ½ cups coconut yogurt


Instructions

Rinse strawberries and slice into ¼-inch pieces.
In a bowl, toss yogurt with 2 tbsp sugar and ½ tsp salt until smooth.
Rinse blueberries; mix with lemon juice and remaining sugar.
Fill each mold one-third with strawberry slices.
Press half a popsicle stick into the center (reserve for last step if needed).
Layer ¼ cup yogurt mixture over strawberries.
Top with blueberries, pressing gently to arrange neatly.
Place filled molds in the freezer for 4 hours or until firm.
Rub mold edges with warm water for 5 seconds and twist mold 90 degrees to unmold.
Insert stick if omitted earlier and freeze an additional 30 minutes if needed.


Notes

Chill molds for 30 minutes before filling to speed up freezing
Use silicone molds for easy release
Freeze strawberry layer 15 minutes before adding next layer
Thawed frozen blueberries work well in a pinch
Adjust sugar to taste
