Ingredients
1 ½ cups graham cracker crumbs
5 tablespoons unsalted butter, melted (or coconut oil for dairy-free)
32 oz (650g) cream cheese, room temperature
¾ cup sugar
1 tsp vanilla extract
3 large eggs, room temperature
Mixed fresh berries (1 ½ cups total: raspberries, blueberries, strawberries)
Unsalted butter for baking dish
Instructions
Preheat oven to 350°F (175°C)
Mix graham cracker crumbs and melted butter until sandy
Press crust into bottom of greased 13×9-inch baking dish
Bake crust for 10 minutes, cool slightly
Beat cream cheese until smooth, then gradually add sugar and vanilla
Fold in eggs one at a time
Pour filling into the crust
Bake 30-35 minutes until firm
Cool completely, then gently top with fresh berries
Chill for 2-4 hours before slicing into 24 bars
