Ingredients
Ground chicken – 1.25 lbs (570g)
Yellow cucumber – 1 large
Grilled Roma tomatoes – 2
Cured feta cheese – 1 small block (6oz/170g)
Kalamata olives – 1/2 cup
Fresh parsley, chopped – 2 tbsp
Kosher salt
Oregano
Coriander
Garlic powder
Olive oil
Instructions
Season the ground chicken with oregano, coriander, garlic powder, and kosher salt.
Heat olive oil in a large skillet over medium heat. Add the chicken and cook until fully cooked through, breaking into small pieces, about 5-7 minutes.
Pre-char the Roma tomatoes over a flame for smoky flavor, then let cool and slice.
Cut the cucumber into slices or chunks.
Crack or crumble the feta cheese into small pieces.
Assemble bowls with cooked chicken, sliced tomatoes, cucumber pieces, feta cheese, olives, and fresh parsley.
