Description

A vibrant and healthy Mediterranean dish featuring lean ground chicken, fresh vegetables, creamy feta, and zesty herbs. Perfect for a balanced, satisfying meal that’s ideal for summer.


Ingredients

Ground chicken – 1.25 lbs (570g)
Yellow cucumber – 1 large
Grilled Roma tomatoes – 2
Cured feta cheese – 1 small block (6oz/170g)
Kalamata olives – 1/2 cup
Fresh parsley, chopped – 2 tbsp
Kosher salt
Oregano
Coriander
Garlic powder
Olive oil


Instructions

Season the ground chicken with oregano, coriander, garlic powder, and kosher salt.
Heat olive oil in a large skillet over medium heat. Add the chicken and cook until fully cooked through, breaking into small pieces, about 5-7 minutes.
Pre-char the Roma tomatoes over a flame for smoky flavor, then let cool and slice.
Cut the cucumber into slices or chunks.
Crack or crumble the feta cheese into small pieces.
Assemble bowls with cooked chicken, sliced tomatoes, cucumber pieces, feta cheese, olives, and fresh parsley.
Serve and enjoy a refreshing, complete Mediterranean meal.


Notes

Use 93% lean ground chicken for a leaner option. Substitute with ground turkey if preferred.
Use zucchini in place of cucumber if out of season.
Use cherry tomatoes for sweeter flavor.
Opt for low-sodium feta or vegan cheese as alternatives.
Grilling the tomatoes adds a unique smoky flavor and depth to the dish.
