Description

Flaky, juicy salmon baked with vibrant citrus zest and aromatic herbs. A quick, healthy Mediterranean-inspired dish ready in 35 minutes with zero oil added except natural moisture.


Ingredients

Salmon fillet (skinless/skin-on) – 4 (6-ounce) pieces
Organic lemon – 2 medium (zest + juice)
Extra virgin olive oil – 1 tbsp
Fresh herbs (dill, parsley, thyme) – 1 tbsp chopped
Balsamic vinegar – 2 tsp (optional)


Instructions

Preheat oven to 375°F (190°C)
Line baking sheet with parchment paper
Rinse salmon under cold water and pat dry
Zest 2 lemons using a Microplane; reserve zest
Slice one lemon lengthwise into rounds
Combine lemon zest, herbs, and 1 tbsp olive oil in a bowl
Spread herb mixture evenly over salmon fillets
Place salmon on prepared baking sheet
Bake for 20 minutes
Garnish with sliced lemon pieces before serving


Notes

Use parchment paper to prevent sticking
Adjust olive oil: remove for an ultra-light version
Substitute balsamic vinegar with white vinegar if preferred
Serve with steamed vegetables or grain for complete meal
