4 boneless, skinless chicken breasts (about 1.5 lbs total)
2 tablespoons olive oil
1 tablespoon unsalted butter
3–4 cloves garlic, minced
1/2 cup sun-dried tomatoes (packed in oil), julienned
1 cup chicken broth
1/2 cup heavy cream
1/2 cup Parmesan cheese, freshly grated
1/4 cup fresh basil, chopped
1 teaspoon dried oregano
Salt to taste
Black pepper to taste
1 tablespoon all-purpose flour (optional, for thickening)
Instructions
Prepare the Poultry. Pat the poultry pieces dry. Season them generously with desired spices.
Sear the Poultry. Heat a large skillet over medium-high heat. Add a blend of fats to the heated skillet. Sear the poultry for 3-4 minutes per side until nicely colored. Remove the poultry and set it aside.
