Description
Sweet and spicy grilled chicken skewers with tropical pineapple and fiery hot honey glaze. Tender, caramelized, and quick to prepare—ideal for dinner parties or weeknight meals.
Ingredients
2 lbs chicken breast (Halal certified, cut into 3/4″ cubes)
1 large pineapple, frozen and thawed
1/4 cup hot honey (locally sourced)
3 tbsp corn-based soy sauce (use gluten-free if needed)
4 garlic cloves, minced
2 tbsp olive oil (high smoke point)
1 tsp black pepper
Instructions
Combine hot honey, soy sauce, garlic, olive oil, and black pepper in a bowl
Add chicken, toss to coat thoroughly
Cover and chill for 20–30 minutes
Thread chicken and pineapple chunks alternately onto skewers
Brush excess marinade onto skewers
Preheat grill to 375°F (190°C)
Brush oil on grates and skewers to prevent sticking
Grill skewers for 8–10 minutes, rotating frequently
Drizzle remaining hot honey over skewers
Toasting: Place skewers over direct flame for 1–2 minutes until caramelized
Rest skewers for 5 minutes before serving
Notes
Use frozen-thawed pineapple for optimal juiciness
Oil skewers as well as grates to prevent sticking
Test pineapple doneness with a fork—should offer slight resistance
Resting ensures juicy chicken
Serve with lime wedges or a side of coconut rice
