Description

Tender, marinated chicken pieces grilled to perfection and glazed with spicy-sweet hot honey. A balance of garlic, chili heat, and golden honey creates a smoky, savory-sweet flavor ideal for summer grilling.


Ingredients

1.5 lbs Chicken Breasts, cut into 1.5-inch cubes (boneless, skinless thighs work too)
4 cloves Garlic, minced or pressed (substitute 2 tsp minced garlic)
3 tbsp Hot Honey (Sicilian-style, chili-infused honey; substitute 1 tbsp honey + 1 tsp Sriracha)
2 tbsp Vegetable Oil (olive or avocado oil preferred)
1 tsp Salt (Kosher salt preferred, adjust to taste)
1/2 tsp Black Pepper (optional additions: smoked paprika or dried thyme)
Cherry Tomatoes, halved (for skewering)
Lemon wedges (for garnish)


Instructions

Whisk together hot honey, minced garlic, vegetable oil, salt, and pepper in a bowl to make the marinade
Add chicken cubes to the marinade and stir until fully coated
Refrigerate for at least 30 minutes, up to 6 hours
Thread chicken cubes onto metal skewers, alternating with halved cherry tomatoes
Preheat grill to medium-high heat (400°F/205°C) and oil the grates to prevent sticking
Brush remaining marinade onto the skewers for extra glaze
Grill skewers, rotating every 2 minutes for even charring
Apply additional hot honey glaze during the final 2-3 minutes of cooking
Cook until the chicken registers 165°F (74°C) internal temperature
Let the skewers rest for 5 minutes before serving
Arrange on a platter with lemon wedges for garnish; serve with optional honey-habanero dipping sauce


Notes

For best results, use uniform chicken cubes. Soak wooden skewers for 30 minutes to prevent burning. Brush the hot honey glaze 1 minute before the end of cooking for a sticky finish. Substitute hot honey with a homemade mix of honey and Sriracha if unavailable.
