Ingredients
1 tablespoon olive oil
1 medium onion, chopped
2 carrots, peeled and sliced
2 celery stalks, diced
2 cloves garlic, minced
6 cups low-sodium chicken broth
2 cups shredded cooked chicken (rotisserie or boiled)
1 potato, peeled and diced
1 cup green beans, chopped
1 cup corn kernels (fresh or frozen)
1 teaspoon salt
½ teaspoon black pepper
1 teaspoon dried thyme
1 tablespoon fresh parsley, chopped
Juice of ½ lemon (optional)
Instructions
1. Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery; sauté until softened, about 5 minutes.
2. Add garlic and cook for another 30 seconds until fragrant.
3. Pour in the chicken broth, add diced potato, thyme, salt, and pepper. Bring to a gentle boil.
4. Reduce heat and simmer for 10–12 minutes, or until vegetables are tender.
5. Add shredded chicken, corn, and green beans. Simmer for another 5–6 minutes.
6. Taste and adjust seasoning. Stir in parsley and lemon juice before serving.
Notes
Use leftover or rotisserie chicken for quicker prep.
Add more broth for a thinner soup or less for a thicker texture.
