Description

A refreshing and balanced chicken salad combining tender chicken, crisp celery, and creamy dressing. Perfect for a quick, nutritious meal with adaptable options for varied preferences.


Ingredients

Scale

Chicken breast
2 (6 oz) pieces, grilled or sautéed (skinless recommended)
Mayonnaise
1/2 cup, or vegan mayo for dairy-free
Celery
1 stalk, finely chopped
Red onion
1/4 cup, chopped and steeped in cold water
Lemon juice
1 tbsp, optional
Salt and pepper
To taste


Instructions

Rinse chicken under water and pat completely dry
Season with 1/2 tsp each of salt and pepper
Grill over medium-high heat (8-9 minutes per side) or sauté in olive oil until internal temperature reaches 165°F
Let chicken rest for 5-10 minutes, then dice into 1-inch cubes
Finely dice celery to match chicken pieces
Chop red onion and steep in iced water for 10-15 minutes for milder flavor
Transfer drained onion to a mixing bowl
Add chicken, celery, mayonnaise, and lemon juice (if using) to the bowl
Toss until well combined
Adjust seasoning with salt and pepper
Serve immediately or refrigerate until ready to use


Notes

Use grilled or sautéed chicken for best texture
Steeping the onion reduces sharpness
Add whole-grain crackers for a fiber-rich serving
Store in an airtight container for up to 24 hours
