1.5 lbs boneless skinless chicken breast, cubed
1 cup quinoa, cooked in vegetable broth
1 can black beans, rinsed and drained
1 cup cherry tomatoes, halved
1 large cucumber, diced
2 tbsp extra virgin olive oil
1 tsp salt
1/2 tsp black pepper
1 tsp garlic powder


Instructions

Dice the raw chicken breast into uniform one-inch pieces to ensure even cooking.
Toss the chicken cubes in a bowl with olive oil, salt, pepper, and garlic powder until well coated.
Heat a large non-stick skillet over medium-high heat until hot.
Sear the chicken for six minutes, turning occasionally, until a golden crust develops on all sides.

Combine the cooked quinoa, beans, and fresh vegetables in a large mixing bowl.
