Ingredients
Marinade & Brine
1.25 lbs chicken breast or thighs, cut into 1½-inch cubes
3 tbsp raw honey
3 tbsp low-sodium soy sauce, or tamari for gluten-free
4 garlic cloves, minced
1 tsp kosher salt
1 tsp black pepper (ground or whole peppercorns)
1 tbsp olive oil
Cherry tomatoes and bell peppers (for skewering)
Instructions
Cut chicken into 1½-inch cubes for even cooking
Brine the chicken: Toss cubes with 1 tsp salt, 1 tsp black pepper, and 1 tbsp oil for 20 minutes
Blend marinade ingredients: Combine honey, soy sauce (or tamari), garlic, and remaining oil in blender for 30 seconds
Marinate chicken: Place cubes in a zip-top bag, pour blended marinade over, seal and press air out
Soak wooden skewers in water for 30 minutes
Preheat grill to 375°F for indirect heat
Thread marinated chicken with cherry tomatoes and bell peppers, leaving ½ inch gaps
Grill for 4-5 minutes per side until caramelized and internal temperature reaches 165°F
Brush with reserved marinade during the final 2 minutes of cooking
