Ingredients
Chicken breast, 450g / 1 lb, cut into 2.5cm cubes
Red bell pepper, 1, remove seeds
Purple onion, 1, quarter slices
Zucchini, 1, pat dry
Plain yogurt, non-fat or Greek, 60g / 1/4 cup
Coconut aminos, 2 tbsp
Olive oil, 1 tbsp
Garlic powder, 1 tsp
Smoked paprika, 1 tsp
Instructions
Mix yogurt, coconut aminos, olive oil, garlic powder, and smoked paprika in a bowl
Add chicken cubes to marinade, toss to coat, refrigerate 30 minutes
Alternate chicken and vegetables on skewers, leaving 5mm space
Preheat grill to 220°C (425°F), oil grates with oiled paper towel
Grill skewers 9-12 minutes, rotating every 2 minutes and brushing with extra marinade during last 3 minutes
Notes
Soak wooden skewers 30 minutes before grilling to prevent burning
Balance chicken and veggie thickness for even cooking
Verify chicken doneness at 74°C (165°F) internal temperature
Rest skewers 5 minutes on grill to retain juices
