Juicy Mediterranean-style chicken skewers marinated in a tangy yogurt, garlic, and herb blend. Grilled to smoky perfection with a bright, zesty finish.
Ingredients
1 lb chicken breast (boneless, skinless)
1/2 cup plain yogurt (non-halal? Use soy milk)
3 cloves garlic (minced or pressed)
2 tbsp yellow mustard
2 tbsp red wine vinegar (swaps: apple cider)
1 tbsp olive oil (for basting)
1/2 cup baby basil (or parsley/cilantro)
Salt (to taste)
Instructions
Whisk yogurt, garlic, mustard, vinegar, and salt in a bowl. Add basil if using fresh.
Cut chicken into 1″ cubes. Pour marinade over chicken. Seal in a zip-top bag for 30 minutes minimum.
Skewer chicken pieces, alternating with cherry tomatoes if desired. Oil grates. Grill 6-7 minutes per side over medium-high heat.
Brush skewers with olive oil during final 2 minutes. Let rest 5 minutes before serving.
Notes
Use a mix of breast and thigh meat for moistness
Oil skewers before threading to prevent sticking
Grill 15-20 minutes at 300°F for deeper char
Press chicken to remove excess marinade before grilling
Marinating too short: 15 minutes isn’t enough
Use thighs for juiciness
