A zesty, smoky grilled chicken recipe with a tangy marinade of vinegar, mustard, and aromatic spices. Tenderized and juicy, this easy recipe is perfect for weeknight dinners or summer gatherings. Marinate overnight for maximum flavor.
Ingredients
1.2kg chicken breasts (or drumsticks/thighs for added juiciness)
120ml apple cider vinegar (white vinegar substitute)
30ml Dijon mustard (or yellow mustard)
2 garlic cloves (or granulated garlic)
15g ground paprika (smoked paprika for depth)
5g cumin (add coriander seeds as variation)
5g salt (adjust to chicken size)
Black pepper, freshly ground
Instructions
Combine vinegar, mustard, garlic, paprika, cumin, salt, and pepper in a bowl. Mix until smooth
Place chicken in shallow dish or zip-top bag. Pour marinade over and massage to coat evenly
Refrigerate for 4-8 hours
Preheat grill to 200°C (medium-high). Oil grates to prevent sticking
Grill chicken 6-8 minutes per side until golden and cooked through (internal temperature 74°C)
Notes
For best results, marinate within 4-8 hours
Test grill temperature by holding hand 5cm above grates – should only tolerate 2-3 seconds
Smoked paprika adds depth
Stir marinade occasionally during refrigeration for even coating
