Ingredients
2 medium chicken breasts (6 oz each)
4 large romaine hearts (1.5 lbs total)
1/2 cup Caesar dressing (anchovy free, no alcohol)
1/2 cup freshly grated Parmesan shavings
1/2 cup garlic toast-style croutons
1 tbsp olive oil
Coarse salt
Black pepper
1/4 tsp garlic powder
Instructions
Pat chicken dry with paper towels and season both sides with coarse salt, black pepper, and 1 tbsp olive oil.
Preheat grill to medium-high heat.
Place chicken on the grill, close the lid, and cook for 6–7 minutes.
Flip once using tongs and add 1/4 tsp garlic powder. Grill until the internal temperature reaches 165°F.
Chop romaine into 1-inch pieces and divide among 4 plates.
Dollop 2 tbsp Caesar dressing and top with 1 tbsp croutons on each plate.
Slice grilled chicken into 1/2-inch medallions and arrange over the salad.
Sprinkle Parmesan shavings and extra croutons as garnish.
Notes
Use a meat thermometer to ensure safe cooking of chicken.
Freshly grated Parmesan ensures the best flavor.
Pre-cut romaine saves time but whole hearts can be trimmed using kitchen shears.
Let the chicken rest for 5 minutes after grilling for juicier results.
