Description

Tender, protein-rich chicken breast marinated in a zesty Greek yogurt and herb mixture, then seared and baked for juicy, restaurant-quality results. Ideal for a Mediterranean-inspired meal with minimal effort.


Ingredients

Boneless chicken breasts (2, 6 oz each) – Use bone-in for extra flavor
Plain full-fat Greek yogurt (1 cup / 227g)
Minced garlic (3 cloves)
Oregano (2 tsp) – Fresh doubles flavor
Dill (1 tsp) – Replace with basil or thyme
Ground black pepper (1 tbsp)
Olive oil (2 tbsp) – Substitute avocado oil


Instructions

Combine yogurt, garlic, herbs, pepper, and 1 tbsp oil in a bowl
Season chicken with salt, then press into marinade
Chill marinade-covered chicken for at least 2 hours, up to 12 hours
Preheat oven to 400°F (200°C) with rack positioned low
Heat 1 tbsp oil in skillet; sear chicken 2–3 minutes per side
Bake until chicken reaches 165°F (20–25 minutes)
Rest chicken 10 minutes before slicing


Notes

Pat chicken dry before searing for optimal crust
Use fresh lemon juice (1/2 tsp) in marinade
Marinate overnight for best results
Monitor cooked chicken with instant-read thermometer
Avoid under-marinating (5 minutes to prevent over-browning
