Description
Juicy grilled chicken skewers marinated in a zesty lemon-herb blend. Served with tzatziki, pita, and salad for a fresh Greek meal.
Ingredients
2 pounds boneless, skinless chicken breasts, 1-inch cubes
4 cloves garlic, minced (or 8 tsp granulated garlic)
1/4 cup olive oil
1/4 cup fresh lemon juice
1 tbsp red wine vinegar (or apple cider vinegar)
1 tbsp dried oregano
1 tsp salt
1/2 tsp ground black pepper
1/2 tsp paprika
12–16 wooden skewers, soaked 30+ minutes
6–8 lemon wedges
Instructions
Combine garlic, olive oil, lemon juice, and red wine vinegar in a bowl. Mix in oregano, salt, pepper, and paprika.
Add chicken cubes to marinade, coating fully. Cover and refrigerate 1 hour minimum (preferably 8+ hours).
Preheat grill to 375-400°F. Thread chicken onto skewers.
Grill 7-10 minutes per side until charred, turning occasionally. Let rest 5 minutes before serving.
Serve with tzatziki, warm pita, and Greek salad. Squeeze lemon wedges over chicken.
Notes
Use apple cider vinegar if avoiding wine vinegar. Soak skewers minimizes burning. For extra tenderness, marinate up to 24 hours. Serve with lamb and halloumi skewers for expanded flavor.
