Ingredients
1.5 lbs chicken thighs (6 pieces), cut into 2-inch pieces
1/2 cup grated parmesan (fresh)
4 garlic cloves, minced
2 tbsp unsalted butter (or olive oil)
1 tsp salt
1/2 tsp black pepper
Instructions
Pat chicken dry with paper towels
Melt butter in microwave or saucepan until liquid
Whisk in garlic, salt, and pepper to make marinade
Toss chicken in marinade until coated
Chill in sealed bag for 2 hours
Soak wooden skewers 15 minutes (if using)
Thread chicken onto skewers, leaving 1/4″ between pieces
Brush skewers with parmesan-butter mixture (1 tbsp melted butter + 2 tbsp cheese)
Preheat grill to 400°F with direct/indirect zones
Sear skewers 2 minutes per side on direct heat
Move to indirect zone and brush with remaining parmesan-butter
Cook 8-10 minutes, turning occasionally until golden and juices run clear
