Description

Juicy boneless chicken cubes marinated in garlic, Mediterranean herbs, and balsamic vinegar, grilled alongside red onions, bell peppers, and tomatoes for smoky summer flair


Ingredients

Scale

2 lbs chicken breasts (boneless, skinless)
4 cloves garlic (minced)
3 tbsp olive oil
1 tbsp rosemary
1 tbsp thyme
1 tbsp oregano
2 small red onions (whole)
2 cups bell peppers (sliced)
1 pint cherry tomatoes (halved)
1 tbsp balsamic vinegar
Salt and pepper (as needed)


Instructions

Dice chicken into 1.5-inch cubes
Combine garlic, olive oil, herbs, vinegar, salt, and pepper in a bowl
Add chicken and toss to coat
Refrigerate marinated chicken 4-6 hours
Thread chicken, whole red onions, bell peppers, and cherry tomatoes onto skewers
Soak wooden skewers 30 minutes if using
Grill over medium-hot coals or gas grill for 10-15 minutes per side
Serve with rice pilaf or pita


Notes

Use chicken thighs for more juiciness
Metal skewers conduct heat better than wooden ones
Soak wooden skewers to prevent burning
Add minced shallots if garlic is substituted
