2 lbs boneless, skinless chicken thighs
1/2 cup unsalted butter, softened
6 garlic cloves, minced
1 tsp kosher salt
1 tsp black pepper, freshly ground
2 tbsp chopped fresh parsley (optional)
Instructions
Cut chicken thighs into 1-inch cubes and pat dry with paper towels
Season chicken cubes with kosher salt and black pepper
Chill seasoned chicken in the refrigerator for 15 minutes before grilling
In a bowl, mix softened butter with minced garlic to form a smooth compound butter
Preheat grill to medium-high heat (375°F) using the direct heat method
Oil grates thoroughly with a paper towel dipped in vegetable oil
Arrange chicken bites in a single layer on the grill without overlapping
Grill 4 minutes per side
Baste with garlic butter during the last 2 minutes of grilling
Transfer to a serving dish and garnish with chopped parsley if desired
Notes
Chicken breasts can be substituted for thighs; adjust cooking time to 3-4 minutes per side
Clarified butter is recommended for higher smoke point if using a high-heat grill
Parsley can be substituted with thyme or rosemary for added aroma
Avoid overlapping chicken bites to ensure even cooking
For halal compliance, ensure chicken and butter are certified halal
