Description

Ingredients

Skinless Chicken Breasts
4 (4 oz each)
Boneless thighs optional for juiciness
Romaine Lettuce
2 heads
Boston or red leaf lettuce substitutable
Red Onion, Sliced
1 medium
Scallions or red bell pepper alternates
Cilantro
1/2 cup chopped
Parsley or mint substitute
Lime Juice
3 medium limes
Lemon juice optional
Olive Oil
1/4 cup
Avocado oil alternate
Minced Garlic
2 cloves
Pre-minced garlic optional
Honey or Maple Syrup
1 tbsp
Agave or salt alternate
Salt & Pepper
To taste
Jalapeño, Sliced
1 small
Optional for heat


Instructions

Preheat oven to 375°F
Season chicken breasts with salt and pepper
Sear in olive oil for 3-4 min per side
Oven cook 10-12 min until internal temp 165°F
Trim excess fat, slice chicken
Toss greens, onion, cilantro, jalapeño in large bowl
Whisk lime juice, olive oil, garlic, honey/maple syrup, salt/pepper for dressing
Pour dressing over salad and chicken
Chill 10-15 min to meld flavors before serving


Notes

Use a mandoline for precise jalapeño slices
Swap cilantro for parsley for a fresher note
Chill leftover dressing in airtight container up to 3 days
For a creamy version add 2 tbsp plain yogurt
Store cooked chicken in refrigerator up to 3 days
