Ingredients
1.5 lbs skin-on, bone-in chicken thighs (or 6 boneless breasts for faster cooking)
2 medium zucchinis (green or yellow)
2 lemons (fresh or bottled juice)
3 tbsp olive oil (avo oil optional)
3 garlic cloves, minced (or garlic powder)
1 tsp oregano
1 tbsp salt (kosher or sea salt)
1 tsp black pepper
1 tsp chile de árbol or paprika (0.5 tsp red pepper flakes optional)
Instructions
Toss chicken thighs with 2 tbsp olive oil, 1 tbsp salt, 1 tsp black pepper, 1 tsp chile/paprika, and 2 tsp minced garlic
Let rest at room temperature while preheating grill to 375°F (190°C)
Grill chicken skin-side down 8-10 minutes; flip and cook 5-7 minutes until 165°F internal temperature
Slice zucchinis 1/4-inch thick; pat dryHeat remaining 1 tbsp oil in same skillet over medium-high heat until shimmering
Add zucchinis with 0.5 tsp salt; sauté 6-8 minutes until golden, tossing halfway
Remove from heat and squeeze juice of 1 lemon over zucchinis
Pull chicken apart into large chunks using tongs

Zucchini can absorb excess juices from grilled chicken
