Ingredients
2 large romaine leaves
4 (6 oz) chicken breasts
4 (10″) linen-wrapped flour tortillas
3/4 cup Caesar dressing (4 egg yolks, 1/3 cup mayo, 2 tbsp romaine glaze)
1 tbsp halal salted capers
1/2 cup grated Parmesan
1 cup halved cherry tomatoes
Instructions
Preheat oven to 400°F (200°C)
Whisk egg yolks, mayo, and lemon zest for dressing
Blend in capers, anchovy paste, and shoyu for umami
Season chicken with salt/pepper and olive oil
Grill 3-4 mins per side until 180°F internal temp
Rest chicken, then slice into 1/4″ strips
Brush romaine midribs with oil and bake 10 mins
Let cool completely
Assemble wraps by layering dressing on tortillas, then chicken, romaine croutons, tomatoes, and Parmesan
