Description
Crispy and golden summer squash coated in freshly grated parmesan, air-fried to perfection for a healthy, flavorful side dish or light meal. Quick, easy, and deliciously savory.
Ingredients
2 medium zucchinis (or yellow squash)
1 cup grated parmesan (freshly grated preferred)
2 tablespoons olive oil (light for crispness)
1 teaspoon garlic powder (or fresh minced garlic)
1/2 teaspoon salt (adjust to taste)
1/4 teaspoon black pepper (freshly ground preferred)
Instructions
Cut the squash into 1/4-inch rounds and pat dry with paper towels
Place squash in a parchment-lined air fryer basket
Spray olive oil evenly over the squash
Toss in garlic powder, salt, and pepper to season
Sprinkle grated parmesan over the squash slices and press gently to adhere
Air fry at 400°F for 12-14 minutes, monitoring closely in the final 2 minutes to avoid burning
Remove when golden and crispy
Notes
Use a single layer of squash in the air fryer for even cooking
Arrange parchment paper in the basket for easy cleanup
For extra crunch, re-air fry for 2-3 minutes after resting
Don’t skip the olive oil spray — it helps the parmesan stick
If the cheese begins to slide off, add it during the final cooking stage
