Description
Cottage Cheese Chicken Salad Bowl is a high protein, fresh and balanced meal made with lean chicken, creamy cottage cheese and crisp vegetables.
Ingredients
2 cups cooked chicken breast
1 cup cottage cheese
1 cup chopped cucumbers
1 cup cherry tomatoes
2 tbsp diced red onion
1 tbsp olive oil
1 tbsp lemon juice
1 tbsp fresh parsley
Salt and black pepper to taste
Instructions
1. Cook and chop the chicken breast.
2. Dice cucumbers, tomatoes and onion.
3. Add chicken to a bowl and top with cottage cheese.
4. Add vegetables over the mixture.
5. Drizzle olive oil and lemon juice.
6. Season with salt, pepper and herbs.
7. Mix gently and serve immediately.
Notes
Store in refrigerator up to 3 days.
Add lemon juice before serving for best flavor.
Use low fat cottage cheese if preferred.
