Ingredients
Chicken (boneless, skinless thighs or breasts) 1.5 kg
Fresh lemon juice 3/4 cup
Garlic, minced 4 cloves
Olive oil 1/4 cup
Oregano (fresh or dried) 2 tablespoons
Salt 1 teaspoon
Black pepper to taste
Instructions
Trim excess fat and cut chicken into even pieces
In a bowl, whisk lemon juice, garlic, olive oil, oregano, salt, and pepper
Add chicken to a resealable bag or container and pour marinade over it
Refrigerate for 2 hours
Preheat grill to 190°C or oven to 200°C
Grill chicken 6–8 minutes per side until golden and internal temperature reaches 74°C
Oven: Bake for 25–30 minutes, turning halfway
Notes
Thighs are more forgiving for beginners
Dried oregano extends shelf life
Adjust garlic and seasoning to taste
