Ingredients
2 (6 oz) chicken breasts
1 cup Greek yogurt (plain or low-fat)
2 celery stalks (cut into matchsticks)
1 medium English cucumber
1 small red onion
1/4 cup fresh parsley
1 tbsp lemon juice
Instructions
Dry chicken breasts with paper towels
Heat oven-safe skillet over medium heat (40 seconds preheat)
Cook chicken 6-8 minutes per side to 165°F
Let rest 5 minutes, then dice
Combine celery, cucumber, soaked red onion, parsley, and lemon juice in large bowl
Mix yogurt dressing into vegetable mixture
Fold in chicken pieces and refrigerate 15 minutes before serving
