Ingredients
2 cups cooked chicken, shredded or cubed
1 can (10.5 oz) cream of chicken soup
1 cup sour cream
1 cup mixed vegetables (peas, carrots, corn)
1 cup shredded cheddar cheese
½ teaspoon salt
¼ teaspoon black pepper
1 teaspoon garlic powder
1 cup crushed buttery crackers or breadcrumbs
2 tablespoons melted butter
Instructions
1. Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.
2. In a large bowl, combine the cream of chicken soup, sour cream, salt, pepper, and garlic powder.
3. Stir in cooked chicken, vegetables, and half of the shredded cheese.
4. Transfer the mixture to the prepared baking dish and spread evenly.
5. Top with remaining cheese.
6. In a small bowl, mix crushed crackers with melted butter, then sprinkle over the top.
7. Bake for 25–30 minutes, until bubbly and golden brown.
8. Let cool for a few minutes before serving.
Notes
Use leftover rotisserie chicken for convenience.
Add a pinch of paprika for color and depth.
Store leftovers in an airtight container for up to 4 days.
To freeze, cover tightly and store for up to 2 months.
