Ingredients
2 large chicken breasts (6–8 oz each)
4 cups chopped romaine lettuce
1/2 cup grated parmesan cheese
4–6 whole wheat tortillas (8–10 inch)
1/2 cup anchovy-free Caesar dressing
2 tbsp olive oil
1 tbsp lemon juice
1 tsp minced garlic
1/4 cup croutons (optional garnish)
Instructions
Combine olive oil, lemon juice, garlic, and parmesan to marinate chicken
Season chicken with salt and pepper
Sear in a nonstick skillet over medium heat for 5-6 minutes each side
Transfer to oven at 375°F for 10 minutes
Toast croutons in oven 5 minutes for crispness
Chill Caesar dressing in refrigerator while chicken rests
Warm tortillas on skillet or microwave 10 seconds
Place each chicken piece on the center of a tortilla, add romaine lettuce
Drizzle with dressing, sprinkle parmesan, and optional croutons
