Ingredients

2 lbs boneless, skinless chicken breasts
3 medium carrots, diced
3 stalks celery, sliced
1 large onion, finely chopped
4 cloves garlic, minced
6 cups low-sodium chicken broth
1 tsp dried thyme
4 oz egg noodles
Salt and pepper to taste


Instructions

Dice carrots, celery, and onion into uniform half-inch pieces.
Place raw chicken breasts at the base of the slow cooker.
Add the diced carrots, celery, onion, and minced garlic over the chicken.
Pour the chicken broth over the ingredients until fully submerged.
Sprinkle with dried thyme, salt, and pepper.
Cover and cook on low for 6 hours.
Remove chicken breasts and shred using two forks.
Return shredded chicken to the pot and stir.
Boil egg noodles in a separate pot and add them to the soup bowls before serving.


Notes
