Ingredients
4 chicken breasts (5–6 oz each)
2 teaspoons olive oil
1½ tablespoons brown sugar
1 teaspoon paprika
1 teaspoon dried oregano or thyme
¼ teaspoon garlic powder
½ teaspoon each salt and pepper
Finely chopped parsley, optional
Instructions
1. Preheat oven to 425°F (220°C).
2. Pound chicken breasts to even thickness using a rolling pin or meat mallet.
3. Rub each piece with olive oil and coat evenly with the seasoning mixture.
4. Line a baking tray with parchment paper and place chicken breasts on top.
