Description

Ingredients

4 chicken breasts (56 oz each)

2 teaspoons olive oil

1½ tablespoons brown sugar

1 teaspoon paprika

1 teaspoon dried oregano or thyme

¼ teaspoon garlic powder

½ teaspoon each salt and pepper

Finely chopped parsley, optional


Instructions

1. Preheat oven to 425°F (220°C).

2. Pound chicken breasts to even thickness using a rolling pin or meat mallet.

3. Rub each piece with olive oil and coat evenly with the seasoning mixture.

4. Line a baking tray with parchment paper and place chicken breasts on top.

5. Bake for 18–20 minutes, or until golden and the internal temperature reaches 165°F (75°C).

6. Remove from the oven and let the chicken rest for 5 minutes before serving.


Notes

If your chicken breasts are large (8 oz+), slice them horizontally to ensure even cooking.
