Description

This easy chicken and rice soup is a simple, homemade comfort meal made with tender chicken, soft rice, and hearty vegetables simmered in flavorful broth.


Ingredients

Scale

1 lb chicken thighs or breasts

¾ cup long-grain rice (jasmine or basmati)

2 carrots, chopped

2 celery stalks, chopped

1 small yellow onion, diced

3 cloves garlic, minced

6 cups chicken broth or stock

1 tsp fresh thyme or parsley (optional)

Salt and black pepper to taste

1 tbsp olive oil or butter

Juice of ½ lemon (optional)


Instructions

1. Heat olive oil or butter in a large pot over medium heat. Add onion, carrots, and celery, and cook until soft.

2. Stir in garlic and cook for 1 minute until fragrant. Add chicken pieces and sear lightly for flavor.

3. Pour in chicken broth, add herbs, salt, and pepper. Bring to a gentle simmer and cook until chicken is tender (about 25 minutes).

4. Remove chicken, shred it, then return to the pot. Add rice and simmer another 15 minutes until rice is tender.

5. Finish with lemon juice and chopped parsley before serving warm.


Notes

You can use chicken breast or thighs depending on preference.

Add extra broth when reheating leftovers, as the rice will thicken the soup over time.

Optional: stir in ¼ cup cream at the end for a richer version.
