Ingredients
4 (6 oz each) boneless skinless chicken breasts
8 oz low-moisture mozzarella cheese, shredded
1 cup grated parmesan (fresh or dairy-free)
6 oz fresh or frozen spinach
2 tbsp olive oil
1/4 cup panko breadcrumbs
2 cloves minced garlic
Instructions
Preheat oven to 375°F (190°C)
Place chicken breasts between parchment paper and lightly pound to 1/4-inch thickness
In a bowl, combine mozzarella, half the parmesan, spinach, garlic, and oil
Evenly distribute mixture across 4 chicken halves
Top each with remaining parmesan and breadcrumbs
Secure with toothpicks and bake 30 minutes until golden

Replace breadcrumbs with almond flour for lower carbs
Omit dairy for vegan version using jack cheese substitute
