Ingredients
Chicken breast (450g or thighs), Pasta (400g; penne or spaghetti), Tomato sauce (200g; low-sodium preferred), Parmesan (1/2 cup, grated or nutritional yeast for vegan), Heavy cream (1/2 cup or coconut milk for vegan), Butter (4 tbsp or vegan alternative), Garlic (1 clove, minced), Chili powder (1 tsp), Salt and pepper (to taste), Olive oil (1 tbsp)
Instructions
Prep ingredients: Cut chicken into 1-inch pieces, cook pasta al dente in salted water, drain, and set aside. Finely chop garlic and grate parmesan.
Sauté garlic in olive oil, add chicken, and cook until golden (5–6 mins). Deglaze with 1/4 cup water.
Add tomato sauce, chili powder, and salt; simmer 5 mins. Stir in cream/parmesan. Combine with pasta and melt butter into the sauce.
Notes
For vegan version, use nutritional yeast and coconut milk. Adjust chili powder to taste. Parmsan dissolution ensures creamy texture.
