Avocado Lime High Protein Chicken Salad is a fresh chicken salad recipe made with shredded chicken, creamy avocado, and bright lime juice for a balanced high protein meal.
Ingredients
2 cups cooked chicken breast
1 large ripe avocado
Juice of 1 lime
1 tablespoon olive oil
1/4 cup diced red onion
1/2 cup cherry tomatoes
1 tablespoon chopped cilantro
Salt and black pepper to taste
Instructions
1. Cook and shred the chicken breast.
2. Mash avocado with fresh lime juice.
3. Add shredded chicken to avocado mixture.
4. Fold in onion, tomatoes, cilantro, olive oil, salt and pepper.
5. Mix gently until combined.
6. Serve immediately or refrigerate for up to 2 days.
Notes
Press plastic wrap directly onto surface to reduce browning.
Add extra lime before serving for freshness.
Use Greek yogurt to increase protein if desired.
