Description

Crunchy-boiled eggs are filled with silky mashed avocado, lime zest, and herbs for a creamy, cholesterol-friendly appetizer. This plant-based twist delivers vibrant Mediterranean flavors with zero artificial additives in 20 minutes.


Ingredients

6 large hard-boiled eggs
1 large ripe avocado
1 tbsp lime juice, plus more to taste
1 tsp salt
1 tsp mixed herbs (optional)
Ice bath
Celery teardrops or radish slices (optional garnish)


Instructions

Fill a pot with water and eggs, bring to a boil.
Cover and remove from heat; let sit 12 minutes.
Transfer to ice bath until cool (3–4 minutes). Peel and pat dry.
Slice eggs lengthwise; pop yolks into a bowl.
Mash avocado until mostly smooth, then add yolks, lime juice, salt, and herbs.
Blend gently with a spatula, pressing through a sieve if preferred.
Season to taste and adjust lime/salt as needed.
Spoon mixture into egg white halves. Garnish if desired.
