Ingredients

2 cups grilled corn kernels
4 cups cauliflower rice (raw or frozen)

Tortilla strips for crunch

Instructions
Peel and shred chicken; set aside half the corn kernels’ dressing
Sauté cauliflower rice with 1 tsp oil, chili powder, cumin, and paprika for 5-7 minutes
