Ingredients
Rotisserie chicken (2 cups, shredded)
Rotini or rotelli pasta (1 cup, cooked and cooled)
Chipotle sauce (2 tablespoons)
Mayonnaise (2 tablespoons)
Red bell pepper (1 cup, diced)
Carrots (1 cup, grated)
Jalapeños (1 tablespoon, minced, optional)
Chopped cilantro (1 tablespoon)
Salt and pepper (to taste)
Instructions
Shred chicken into bite-sized pieces
Cook and cool pasta until al dente
Dice bell pepper and grate carrots
Combine chipotle sauce and mayonnaise in a bowl
Chop jalapeños and cilantro
Mix all ingredients in a large bowl
Season with salt and pepper
Chill for 30 minutes before serving
Notes
Use Greek yogurt instead of mayonnaise for a lighter version
Replace jalapeños with mild serrano peppers if desired
