Description

Grilled to perfection, these Spicy BBQ Chicken Skewers combine smoky, sweet, and fiery flavors with bell peppers and caramelized onions. A halal-friendly Mediterranean-American fusion dish that’s easy to make and bursting with flavor.


Ingredients

2 lbs (900g) chicken breast, cut into 2-inch cubes
1 cup (240ml) BBQ sauce, homemade or store-bought
2 medium yellow bell peppers, seeded
1 large red onion, cut into 2-inch thick slices
1 tbsp grill spice mix (paprika, cumin, chili powder)
1 tbsp olive oil, optional for low-fat option
1 tsp salt


Instructions

Cut chicken breasts into cubes, arranging by weight to balance skewers
Combine grill spice mix, 1 tsp salt, and 1 tbsp olive oil
Coat chicken in the spice rub, reserve remaining BBQ sauce
Marinate refrigerated for at least 30 minutes
Thread skewers alternately: onion slice, chicken cube, bell pepper piece
Ensure 1/2-inch spacing between ingredients
Brush skewers with remaining BBQ sauce before grilling
Preheat gas or charcoal grill to medium heat (350-400°F/175-200°C)
Oil grill grates to prevent sticking
Place skewers on grill, lid closed for indirect heat
Flip every 3-4 minutes using tongs until internal temperature reaches 165°F
Serve immediately
