Ingredients
Chicken breast
2 (6 oz each), skinned, boneless
Pasta
12 oz dry penne or rigatoni
Marinara sauce
2 cups (low-sodium preferred)
Grated parmesan cheese
1 ½ cups (freshly grated)
Garlic
3 cloves, minced
Olive oil
3 tbsp
Italian seasoning
1 tsp (adjust to taste)
Instructions
Preheat oven to 375°F (190°C). Lightly oil a 9×13-inch baking dish
Slice chicken breasts horizontally for even cooking
Brush with olive oil, sprinkle garlic, Italian seasoning, and salt
Broil chicken 6 inches from heat for 5 minutes per side to crisp skin
Cook pasta according to directions. Drain, stir in 1 tbsp olive oil to prevent sticking
Layer marinara in baking dish
Nestle chicken breasts into sauce
Top with pasta and remaining sauce
Spread grated parmesan evenly over mixture
Bake for 25-30 minutes until bubbly and golden
