Description
This simple Mediterranean chicken recipe is made in one skillet with fresh garlic, lemon, olives, and feta. It’s an easy weeknight dinner packed with bright Mediterranean flavors.
Ingredients
4 boneless, skinless chicken breasts
2 tablespoons minced garlic or garlic paste
Kosher salt and black pepper to taste
1 tablespoon dried oregano, divided
2 tablespoons extra virgin olive oil
1/2 cup dry white wine (or chicken stock)
1 large lemon, juiced
1/2 cup chicken broth
1 medium red onion, finely chopped
4 small tomatoes, diced (about 1 ½ cups)
1/4 cup sliced green olives
Handful of fresh parsley, chopped
Crumbled feta cheese (optional)
Instructions
1. Pat the chicken breasts dry and season both sides with garlic, oregano, salt, and pepper.
2. Heat olive oil in a large skillet over medium-high heat until it shimmers.
3. Sear the chicken on both sides until golden, about 4–5 minutes per side.
4. Add the white wine, lemon juice, and chicken broth to deglaze the pan and create a rich sauce.
5. Add tomatoes and olives, cover, and simmer for 5–6 minutes.
6. Finish by sprinkling parsley and crumbled feta on top before serving.
Notes
For a richer version, use chicken thighs instead of breasts.
Skip the feta for a dairy-free meal.
Serve with couscous, rice, or roasted vegetables for a balanced Mediterranean dinner.
