Description

A vibrant Mediterranean dish where juicy salmon fillets roast with cherry tomatoes, olive oil, and fresh herbs. The skin-on salmon locks in moisture while basil and lemon infuse a tangy flavor—all in 35 minutes.


Ingredients

Scale

4 salmon fillets (6 oz each)
1 pint cherry tomatoes
3 tbsp olive oil
1/4 cup fresh basil
1 lemon, sliced
Sea salt to taste
Black pepper
Balsamic glaze (optional)


Instructions

Preheat oven to 375°F. Line a baking sheet with parchment paper
Sprinkle 1 tsp salt on salmon fillets and brush olive oil evenly over both sides
Arrange cherry tomatoes in a single layer on the sheet
Sprinkle fresh basil, salt, and pepper over each fillet and tomato
Top each salmon with lemon slices
Bake on the middle rack for 20-25 minutes until salmon flakes easily and tomatoes blister


Notes

Use skin-on salmon to retain moisture
Blot cherry tomatoes dry to prevent sizzling and popping
Add lemon slices after the first 5 minutes of baking to avoid burning
Replace salmon with trout if desired
