Description

Juicy, zesty Mediterranean-style chicken marinated in yogurt, lemon, and aromatic spices. A quick, easy recipe for tender, restaurant-quality grilled chicken with Mediterranean flair.


Ingredients

Chicken (boneless, skinless thighs or breasts) 1.5 lbs (680g)
Plain yogurt 1 cup (240ml)
Lemon juice 1/4 cup (60ml)
Minced garlic 2 cloves
Cumin 1 teaspoon
Coriander 1 teaspoon
Paprika 1/2 teaspoon
Sea salt 1 teaspoon
Black pepper to taste


Instructions

Combine yogurt, lemon juice, garlic, cumin, coriander, paprika, sea salt, and black pepper in a large mixing bowl.
Whisk the marinade until all ingredients are well incorporated.
Cut chicken into even portions and add to the marinade, ensuring complete coverage.
Cover and refrigerate for at least 30 minutes (up to overnight).
Preheat grill to medium-high heat (around 400°F/200°C).
Remove chicken from marinade and let rest for 5 minutes.
Grill for 6–8 minutes per side or until internal temperature reaches 165°F (74°C).
Let chicken rest for 5 minutes before serving.


Notes

Use Greek yogurt for a creamier texture.
Adjust seasoning based on taste.
Works with chicken thighs or breasts; thighs are more forgiving for beginners.
Marinate for up to 24 hours for maximum flavor.
For gas grills, preheat with the lid closed for 10 minutes.
